As I’m not keen on the amount of sugar in store bought tomato sauce, I have found a solution using no sugar and just two ingredients.
- 1 can of chopped tomatoes
- 2 tbsp Dibbis – date syrup
In a small saucepan bring the tomatoes to a boil. Stir in the date syrup, season with salt and pepper. Allow the sauce to simmer and reduce by half.
Once cooled puree until smooth and store in an air tight container in the fridge.
We buy our Dibbis (date syrup) from an Afghani supermarket, but you could easily make it yourself.
- 1 cup dates, pitted
- 1 tbsp lemon
- 1 1/2 cups water
- pinch of salt
In a saucepan warm the dates, lemon, water and salt to soften the dates. Then blend in a food process or blender until you have a smooth consistency. Store in an airtight container in the fridge.
