Now that the chocolate egg eating season is over I am left with sugar cravings. So, today we made chocolate bliss balls with roasted almonds, coconut and dates. I now understand why they are called bliss balls. After binging on refined sugars, as if I was missing out on something, naturally sweetened treats really are bliss.
In a medium bowl place 1 cup of dates and cover with boiling water.
In a food processor blend 1/2 cup roasted almonds until fine.
Remove the dates from the water, reserving the liquid, and add to almond mix. Process until fine and incorporated.
Add a pinch of salt, 2 tablespoons of cocoa and about a cup of desiccated coconut. If the mixture is too dry add a teaspoon or so of the date water.
Process thoroughly. Form balls and roll in desiccated coconut.
